Melon Sesame Salad With Raspberry Vinaigrette |
Ingredients

* 1/2 lb watermelon, trimmed, seeded, and cut into cubes
* 1/2 lb cantaloupe, trimmed, seeded, and cut into cubes
* 2 Tbsp toasted sesame seeds
* 1 Tbsp chives, finely chopped
* 1 Tbsp mint, finely chopped
* 1 teaspoon salt
* 1/4 cup raspberry vinaigrette
* 1 to 2 Tbsp sugar
* 1 tsp sesame oil
* 6 oz romaine lettuce

Directions

1. In a large bowl, toss together the watermelon, cantaloupe, sesame seeds, chives, mint, and salt.
2. In a separate bowl, whisk together the raspberry vinaigrette, sugar, and sesame oil, then pour over the salad and toss to coat.
3. Cover and refrigerate for at least 30 minutes or until chilled through.
4. Serve by laying a romaine lettuce leaf or two on a salad plate, and spoon a portion of the melon salad on top. Sprinkle more toasted sesame seeds on top if you wish.

When watermelon and cantaloupe (muskmelon) are in season, it's hard to pass them up. For that reason, we usually end up with several on the kitchen counter at the same time. Without a big picnic planned, it's hard for our family to eat them all up.
This salad is a great way to use up all that melon! It makes a nice side dish but could easily be served as a luncheon salad or even a dessert. Enjoy!
