Mexican Casserole |
Ingredients
|
* 1 pound lean ground beef
* 1 small onion chopped
* 1 can Rotel tomatoes and peppers
* 1 can cream of chicken soup
* 12 corn tortillas
* 1 can Ranch Style Beans, drained
* 1 small box of Velveeta Cheese 1/2 pound

Directions
|
1. Brown meat and onion together. Drain.
2. In casserole dish cover bottom with tortillas.
3. Layer meat and onions, beans, slices of cheese.
4. Layer 6 tortillas on top of this.
5. Pour tomatoes and soup on top.
6. Cover with foil.
7. Bake on 350 degrees for 30 minutes.

I love Mexican food. My family enjoys this recipe. I love it because it is quick and easy. This is a great one to make and freeze for future meals. I know that many moms work. This is great for those nights that you work late or nights that baseball, church, etc. keep us out late or we need a meal in a hurry.
