Minted Lentil Salad |
Ingredients

*1/2 onion, peeled and studded with 2 cloves
*1 1/2 cups lentils
*2 cloves garlic, peeled
*1 bay leaf
*2 tsp ground cumin, divided
*3 1/2 C of water
*2 tbsp red wine vinegar
*1 tbsp lemon juice
*3 tbsp extra-virgin olive oil
*2 tbsp fresh mint, finely chopped
*3 scallions, finely sliced

Directions

1.Put the onion, lentils, garlic, bay leaf, 1 tsp cumin and 3 1/2 cups of water into a saucepan and bring to a boil.
2. Cook over medium heat until all water is absorbed, about 30 minutes.
3. Discard the bay leaf and the onion. Remove the garlic cloves and finely mince.
4. Mix the remaining ingredients and the minced garlic together well.
5. Add the cooked lentil mixture and let stand 30 minutes before serving.
