Minty Melon Salad With Simple Syrup |
Ingredients

* 2 cups watermelon balls
* 2 cups cantaloupe balls
* 1 bunch fresh mint, chopped
* 1/4 cup lemon juice
* 1/4 cup simple syrup (see recipe below)
* 1/8 teaspoon amaretto (optional)

Directions

To make simple syrup:
1. In a saucepan, combine 1/2 cup water with 1 cup sugar.
2. Put over medium heat and bring to a boil, immediately reduce heat to simmer and cool at a slow simmer for about 5 minutes or until the sugar dissolves.
3. Let syrup cool. (Store the remaining syrup in an airtight container in refrigerator for another use.) This makes 1 cup of simple syrup.
To make salad:
1. Put melon balls in a large bowl.
2. In a blender, put mint, lemon juice, simple syrup, and amaretto, blend on high until mixture is smooth.
3. Pour this dressing over the melon and toss to combine.
4. Serve in salad bowls with a sprig of mint.

If you're asked to bring a fruit salad to the next family picnic, grab this recipe and surprise everyone. Rather than a whipped cream and mayonnaise deal, this fruit salad is so much more refreshing and elegant, but with very little work.
Having a supply of simple syrup ready and waiting in the refrigerator is a great idea. So many recipes like this, in addition to drinks like homemade lemonade, rely on simple syrup for the taste. Sprinkling sugar in just doesn't work like simple syrup does.
hint: you have enough simple syrup with this recipe to quadruple the other ingredients for a much bigger salad.
