Mixed Beans and Pine Nuts Skillet


* 2 cups fresh green beans, trimmed
* 2 cups fresh yellow wax beans, trimmed
* 1/4 cup chopped onion
* 1/4 cup butter
* 3 tablespoons toasted pine nuts
* 1/2 teaspoon dried tarragon
* 1/2 teaspoon salt


1. Place beans in a saucepan and fill with water.
Bring to a boil then bring heat down to medium and cook for about 10 minutes; until beans are tender. Drain well.
2. Put beans back in saucepan and add the rest of the ingredients. Heat over medium heat, stirring constantly, until everything heated through.


I get tired of my own recipes sometimes, but this green and wax bean recipe will never disappoint. And can you ever find enough uses for Pine Nuts? I don't think so. This is a great vegetable to serve alongside a grilled chicken breast, but also stands up very well against a hearty grilled steak, too. The beans are very flavorful, so they will not retreat from any main dish.
