Mixed Fruit Chutney - Crock Pot


* 11 oz box dried apricots
* 12 oz box pitted prunes
* 29 oz can pear halves, do not drain
* 29 oz can peach slices, do not drain
* 1/4 cup raisins
* 1/2 cup raspberry vinaigrette dressing
* 1 teaspoon curry powder


1. Place all ingredients in crock pot and mix well.
2. Cook, covered, on low for 4-6 hours.


Fruit Chutney is a great, special occasion treat. What I like about this recipe is it doesn't just taste super-sweet, like some chutney does. When you mix in the vinaigrette and curry powder, the whole aroma changes. Chutney should, in my book, have a little bite to it behind the sweetness. This is very rich so you might want to spread a little whipped cream cheese on your cracker before you put on your chutney. The cool and creamy cream cheese is a nice background for the sweet and spicy chutney.
