Mixed Vegetable & Walnut Stir Fry

Ingredients

* 2 TBSP frying oil
* 2 onions, chopped
* 2 carrots, chopped
* 1 C of mushrooms, sliced
* 1 head of broccoli, coarsely chopped
* 2 TBSP walnuts
* 1 C of vegetable broth
* 1 TBSP cornstarch
* 2 TBSP cold water
* 3 TBSP soy sauce
* 1/2 tsp salt
* 1/4 tsp pepper

Directions

1. Heat the oil in a hot wok then stir in the onions, carrots and mushrooms
2. Add the broccoli, walnuts and broth and cook until the vegetables are tender.
3. Dissolve the cornstarch in the cold water and stir into the mixture.
4. Allow to thicken to your liking then stir in the soy sauce, salt and pepper.

Story

When you need a special side dish for a special meal, this is it! I was hesitant at first about using walnuts in a stir fry (thinking slivered almonds are more traditional)but the walnuts tasted great and held up to the heat very very well. Enjoy!
