1. Mix together the flour, baking powder and soda, salt and cinnamon.
2. In another bowl whisk the buttermilk, oil, molasses, ginger and egg yolks together.
3. Fold in the applesauce and pour into the flour mixture, stirring to combine.
4. Beat the egg whites 5 minutes or until soft peaks form then fold into the batter.
5.Spray the waffle iron with cooking spray and pour in 1/3 C of batter cooking for 5 minutes or until the steam stops and continuing until all the batter is used.

Molasses and ginger are two very powerful flavors that, when put together, form a wonderful relationship! These waffles are perfect for a special breakfast. You may want to heat a little molasses to drizzle on top like syrup. Just put about 3/4 to 1 cup of molasses in a sauce pan with about 1 teaspoon of butter and heat on low until the butter just melts, then keep warm to serve.
