Mozzarella Veggie Hash Browns


*2 TBSP of canola oil
*3 C frozen hash browns with onions and peppers
*2 C of pasta sauce with mushrooms
*1 C frozen corn
*1 C frozen peas and carrots
*1/2 C mozzarella cheese, shredded


1.Heat the oil in a skillet then add the hash browns and cook for 8 to 10 minutes, flipping once, until browned.
2.Stir in the pasta sauce, corn, peas and carrots and cook 7 minutes.
3.Sprinkle with the cheese, cover and heat 1 minute or until the cheese melts.


We cook this veggie-loaded hash brown dish to serve with fried or grilled fish. It really rounds out a simple fish dinner nicely. Instead of just having plain hash browns, or french fries, this hash brown skillet filled with vegetables makes the meal more colorful, flavorful, and more nutritious.
