1.Heat the oil in a skillet then add the hash browns and cook for 8 to 10 minutes, flipping once, until browned.
2.Stir in the pasta sauce, corn, peas and carrots and cook 7 minutes.
3.Sprinkle with the cheese, cover and heat 1 minute or until the cheese melts.
