No Gluten Banana Bread |
Ingredients

* 2/3 C gluten-free flour
* 2/3 C cornstarch
* 1/2 C tapioca flour
* 1/2 tsp xanthium gum
* 3/4 tsp baking soda
* 1 1/4 tsp cream of tartar
* 1/2 tsp salt
* 1/3 C soft butter
* 2/3 C brown sugar
* 2/3 C egg substitute
* 1 tsp vanilla
* 1 C of ripe bananas, mashed

Directions

1. Preheat the oven to 350 and lightly spray a 9X5 loaf pan.
2. Combine together the first 7 ingredients in a large bowl.
3. Cream together the butter and brown sugar then slowly add the egg and beat until fluffy.
4. Stir in the vanilla and bananas then add to the flour mixture and stir well.
5. Pour into the loaf pan and bake for 50 minutes cooling on a wire rack before slicing.
