Nutty Apple & Cranberry Brown Rice Salad

Ingredients

*2 C brown rice, cooked and cooled
*2 tart apples, peeled, cored and chopped
*1/4 C dried cranberries
*1/4 C chopped pecans
*1 C vanilla yogurt
*1/4 C of pure honey
*2 Tbsp lemon juice

Directions

1. Place the rice, apples, cranberries, and pecans in a bowl and toss to combine.
2. Stir in the yogurt, honey, and lemon juice well.
3. Cover and refrigerate until chilled through.
4. Serve chilled as a salad, side dish, or even a dessert.
