Nutty Banana Berry Breakfast Sandwich


*1 (15.6 oz) box Cranberry Quick Bread mix
*1 C water
*2 TBSP canola oil
*2 large eggs
*3 TBSP creamy peanut butter
*1 banana, peeled and sliced


1. Set the oven temperature to 350 degrees.
2. Spray a loaf pan with a non stick cooking spray.
3. Lightly flour the pan shaking out any excess.
4. Dump the quick bread mix into a large bowl.
5. Pour the water and oil into the mix.
6. Break both eggs into the mix.
7. Whisk until combined together well.
8. Bake the bread for the time requirement on the box.
9. Allow the bread to cool to room temperature.
10. Once cooled slice the bread into a least 8 slices.
11. Spread half the slices of bread with the peanut butter.
12. Layer banana slices over the peanut butter.
13. Cover with a second slice of bread to make the breakfast sandwich.


I must admit, I only make this on a lazy weekend. That's because I want to lay around and enjoy munching on it all morning and late into the day. This is best when it first comes out of the oven all hot and yummy. Try this on a sleep-over morning for the kids.
