Nutty Broccoli Salad |
Ingredients

* 1 cup mayonnaise
* 1/4 cup sugar (adjust to taste)
* 3 tablespoons white vinegar
* 4 cups cut up broccoli(bite sized pieces)**
* 1/2 cup chopped red onion
* 1/2 cup raisins
* 1/2 cup cashews
* 8 slices bacon, fried and crumbled
** You may want to blanch or microwave the broccoli until just crisp/tender, then cool.

Directions

1. Combine mayo, sugar, and vinegar in a large serving bowl. Whisk together.
2. Add broccoli, onion, raisins, and cashews, and toss together to coat well.
3. Cover and refrigerate for 3-4 hours.
4. Fry bacon crispy, then crumble.
5. Top with bacon before serving.

Through the years, I've made a variety of broccoli salads for my family. Some really good, some not so good. This salad earns kudos from my family because of the sweet addition of raisins and cashews. Kids just can't justify saying no to their broccoli when you serve it in a sweet salad!
A little note about raw broccoli salads - I always give my broccoli flowerettes a quick blanch or microwave for a minute or so. This takes some of the bitterness or bite away that raw broccoli often has. The result is a more fragrant broccoli that is more flavorful as well. The flavor also cooperates more with the other flavors of the salad instead of competing with them. Just have a cold, ice bath ready to stop the cooking.
