*2 tbsp vegetable oil
*1/2 oz butter
*1 large onion, chopped fine
*1 clove garlic, crushed
*3 tomatoes, chopped
*1/2 inch fresh ginger, grated
*1 tsp ground cumin
*1 tbsp fresh cilantro, chopped
*1 lb. okra, washed and trimmed
*1 (14 oz) can garbanzo beans, drained
*Sea salt to taste
*Black pepper to taste
*Serve over hot rice.
1. Heat the oil and butter in a large skillet or wok then stir in the onion and garlic stir frying for 3 minutes.
2. Stir in the tomatoes, ginger, cumin, cilantro and okra and stir fry for 3 minutes.
3. Add the beans and stir fry for 3 more minutes or until the beans are hot.
4. Season with the salt and pepper before serving.
5. Serve over hot rice.
