Okra & Chick Pea Stir Fry

Ingredients

*2 tbsp vegetable oil
*1/2 oz butter
*1 large onion, chopped fine
*1 clove garlic, crushed
*3 tomatoes, chopped
*1/2 inch fresh ginger, grated
*1 tsp ground cumin
*1 tbsp fresh cilantro, chopped
*1 lb. okra, washed and trimmed
*1 (14 oz) can garbanzo beans, drained
*Sea salt to taste
*Black pepper to taste
*Serve over hot rice.

Directions

1. Heat the oil and butter in a large skillet or wok then stir in the onion and garlic stir frying for 3 minutes.
2. Stir in the tomatoes, ginger, cumin, cilantro and okra and stir fry for 3 minutes.
3. Add the beans and stir fry for 3 more minutes or until the beans are hot.
4. Season with the salt and pepper before serving.
5. Serve over hot rice.

Story

This is a nice vegetarian meal but is hearty enough to satisfy even the meat eaters. If you never thought of cooking okra in a stir fry before, this is the recipe to try. Okra tastes best when it isn't over-cooked or left to sit. The fresher the better. That's why the hot and quick cooking method of stir frying is the perfect way to try okra for the first time.
