Old Fashioned Cornbread Mini Muffins |
Ingredients

* 2 C white corn meal
* 1 tsp. salt
* 2 C boiling water
* 2 C milk
* 4 egg whites
* 4 tsp. baking powder
* 1 TBSP margarine, melted

Directions

1. Heat the oven to 425 degrees.
2. Spray a mini muffin tin generously with a non stick cooking spray.
3. Place the corn meal in a large mixing bowl, sprinkle in the salt and mix the two ingredients together well.
4. Carefully pour the boiling water into the bowl with corn meal, stirring as you add the water. Continue stirring quickly so the corn meal doesn’t ball up until the corn meal is completely moistened.
5. Pour in the milk while continuing to stir quickly.
6. Place the egg whites into the mixture.
7. Use an electric mixer on low, beat to mix completely.
8. Place the baking powder into the mixture and continue beating for 1 minute.
9. Pour the melted butter into the mixture and mix until completely combined.
10. Fill each muffin cup 2/3 full of the batter.
11. Bake 10 minutes or until a nice golden color and a toothpick inserted in the centers comes out clean.

Everyone needs a nice, simple corn meal muffin recipe. I like the old fashioned feeling of this one. These little mini muffins are such a treat in the morning, dipped in a bit of maple syrup, they make a wonderful 'special' breakfast any day.
