Old Fashioned Fruit & Lettuce Salad |
Ingredients

* 1/3 C sugar
* 1 Tbsp cornstarch
* 1 Tbsp lemon juice
* 1/8 tsp salt
* 2 eggs, lightly beaten
* 6 C torn lettuce
* 1 (20 oz.) can pineapple chunks, save juice
* 1 ripe banana, sliced
* 1 C seedless red grapes cut in halve
* optional: 1 C miniature marshmallows

Directions

1. Mix the sugar and cornstarch together in pan.
2. Stir in the lemon juice, reserved pineapple juice and salt.
3. Place the pan over medium heat.
4. Stirring constantly cook 2 minutes or until the sugar is completely dissolved.
5. Remove 1 Tbsp of the mixture and whisk it into the eggs quickly.
6. Pour the egg mixture into the pan with the remaining juice.
7. Bring the mixture to a gentle steady boil.
8. Reduce the heat to low and cook 2 additional minutes.
9. Remove the pan from the heat and allow it to cool to room temperature.
10. Place the lettuce into the bottom of a salad bowl.
12. Layer the fruit over the top of the lettuce.
13. If you'd like, sprinkle marshmallows onto the fruit.
14. Pour the cooled sauce over the top coating the fruit well.

I know you can just buy some whipped topping and mix it up with your fruit, but when you want a real old-fashioned fruit salad, nothing beats a homemade dressing. The lemon juice brightens the sauce up quite a bit and keeps the banana from yellowing on your plate, too. Kids who don't like to eat lettuce will even enjoy this plate, once the sweet dressing drizzles all the way down to their lettuce.
