Old Fashioned Spicy Spanish Rice |
Ingredients

* 1 cup white rice
* 2 cups chicken broth
* 3 tablespoons tomato paste
* 2 teaspoons chili powder
* 1/2 teaspoon pepper
* 1/2 teaspoon ground oregano
* 1/4 teaspoon ground cumin
* 1/2 teaspoon salt
* 1 medium onion, diced
* 1 red bell pepper, diced
* 1 garlic clove, minced
* 3 tablespoons olive oil

Directions

1. Saute onion and bell pepper in olive oil until onion is slightly transparent. Add rice and garlic and cook until rice is lightly browned, stir constantly.
2. In a separate bowl, combine tomato paste, chicken broth and all the spices. Add to the rice and stir well.
3. Bring heat down to low and simmer (covered) for about 15 minutes, stirring occasionally, checking the rice to make sure it's done before taking off stove.

Isn't it great to see a real Spanish Rice recipe? I know you can throw a can of spaghetti sauce in a pot of rice and get so-called Spanish Rice, but the real old fashioned way of making Spanish Rice calls for some real honest-to-goodness spices, onion, and green pepper. Also, browning the white rice a bit adds an incredible, nutty flavor. Once you try this authentic version of Spanish Rice you will never try a shortcut again.
