Old World Kielbasa & Pasta |
Ingredients

* 4 cups regular size egg noodles(Or substitute any noodle or pasta you have on hand.)
* 1 ring kielbasa, cut into small, bite size rounds
* 1 tablespoon cooking oil of choice
* 4 cups coleslaw mix (You can of course shred cabbage and carrots yourself.)
* 1 small onion, diced
* 1 tablespoon butter for noodles (optional)
* chopped parsley for garnish (optional)

Directions

1. Cook noodles according to the package.
2. Meanwhile, heat oil in large heavy skillet over medium-high heat.
3. Add kielbasa and cook, stirring, until browned. This will only take about 5 minutes.
4. Add coleslaw mix and onion. Stir until mixture is lightly browned. Cover, reduce heat. Let simmer for about 5 minutes or until just tender.
5. Drain noodles and mix in butter if desired. Spoon kielbasa cabbage mixture over noodles in individual servings and top with chopped parsley.

Story

Kielbasa is a staple in my Polish-German home. My Grandma's table was not complete without it. It's a challenge to find new ways to enjoy this inexpensive, delicious mainstay! I like this one because if you are not a fan of sauerkraut, you can still enjoy the perfect marriage of cabbage and kielbasa. Enjoy!
