1. Combine cottage cheese with gelatin mix in glass bowl, mixing gently but thoroughly.
2. Add oranges and pineapple, mixing thoroughly but don't over-mix.
3. Fold in whipped topping with a spatula, lifting from the bottom, folding inward, lifting, folding, until blended well, but not over-mixed.
4. Cover bowl with plastic wrap and put bowl in refrigerator for 1 hour before serving.

This dessert is so simple, but tastes like you put a lot of time and effort into it. Don't tell a soul that you didn't beat one single egg white to get that nice fluffy look and texture.
Be sure to drain the oranges and pineapple very well so you don't end up with a soggy dessert.
I like to add a sprinkle of toasted, slightly salted, almond slivers for a bit of crunch and color. It's easy to toast almond slivers. Just put a dry (no oil) skillet on medium heat and put almonds in the pan. Shake the pan for about 30 seconds to 1 minute or just until you can smell the almonds. If you want a hint of salt (which is a nice compliment to sweet) sprinkle just a tiny bit of fine salt or 'popcorn salt' on the almonds when they are warm. Dump the almonds onto a paper towel to absorb any salt that didn't stick to the almonds. Then top the dessert with the almonds.
