Orzo With Toasted Pine Nuts And Fresh Basil


* 1 pkg (8 oz) Orzo
* 1 Tbsp extra virgin olive oil
* 3 Tbsp pine nuts
* 1/4 cup fresh basil, chopped
* salt and pepper to taste


1. In a large pot, cook orzo until just tender, about 2 to 3 minutes, and drain.
2. As orzo is cooking, put oil in large heavy skillet and heat to medium; add pine nuts and stir until lightly toasted, about 4 or 5 minutes.
3. Add the fresh basil, tossing until fragrant, about 1 minute, then add orzo and toss.
4. Taste and season with salt and pepper if desired. Serve warm.


This dish is simply elegant. You might like to squeeze a little fresh lemon juice before serving, or serve with a lemon wedge. It brightens the flavor and color, and is especially nice with the fresh basil.
