Oven Roasted Cauliflower


* 1 head cauliflower
* 3 tablespoons olive oil
* 1 teaspoon salt
* 1/8 teaspoon white pepper
* 3 cloves garlic, minced


1. Preheat oven to 400.
2. Break cauliflower into florets, then cut into 1/2" chunks.
3. Toss cauliflower with olive oil and garlic. Spread on a large baking sheet then sprinkle with salt and pepper.
4. Bake for about 40 minutes, until lightly browned.


Oven roasting vegetables is my latest best trick. Even kids who aren't too thrilled about eating their veggies will find an oven roasted veggie a little more palatable. The cauliflower takes on kind of a nutty flavor and the texture is better than what you get from boiling. Oven roasting vegetables really is one of the nicest ways to enjoy your four servings of vegetables every day.
