Oven Roasted Seasoned New Potatoes


* 8 to 12 new red potatoes, cut in half or quarters
* 1 large onion, cut in chunks
* 1 Tbsp seasoning or grilling blend of your choice
* 2 tablespoons olive oil
* salt and pepper to taste


1. Preheat oven to 400.
2. Place all ingredients in a 9x13 shallow baking dish. Toss to coat.
3. Bake for 40 minutes, turning once during cooking.


This is the kind of potato dish that you can throw together in a minute and walk away from pretty much. It goes well with grilled foods but also with baked chicken, fish, or a nice beef roast. Use any seasoning that seems appropriate for what you're serving - if you're grilling barbecue chicken, choose a barbecue flavored seasoning. Have fun with the combinations and see what you can come up with.
