Pan Fried Potato & Onion Slices


*2 onions, peeled, cut into rings
*1 Tbsp margarine (or butter)
*1 Tbsp canola oil
*1 1/2 lb. whole boiling potatoes
*1/2 tsp salt
*1/2 tsp pepper


1. Scrub potatoes and cook in boiling water until fork tender, but not mushy.
2. Cool potatoes and slice into thin round slices.
3. Heat the margarine and oil in a large heavy skillet and add the onions, cooking for about 3 minutes, or until just starting to get tender.
4. Add the potatoes, season with the salt and pepper and cook 5 minutes, turn, then cook 5 more minutes or until browned.


These pan fried potatoes and onions make a nice side dish for a grilled fish meal. It also is great alongside a nice hamburger. Add a few diced green pepper pieces to the onions for a little extra color and crunch. You can also sprinkle smoked paprika over the top for a nice smoky flavor.
