Peachy Chicken and Sweet Potatoes - Crock Pot |
Ingredients

* 4 chicken breasts, boneless and skinless
* 2 sweet potatoes, peeled and diced
* 1 medium onion, diced
* 2 tbsp cold water
* 3 tbsp cornstarch
* 2/3 C peach preserves

Directions

1. In the bottom of the crock pot put the chicken breast.
2. Lay the sweet potatoes over the top of the chicken.
3. Sprinkle the onions over the sweet potatoes.
4. Cook covered 7 hours on low.
5. After 7 hours remove the chicken and sweet potatoes and keep warm.
6. Mix together well the cold water and cornstarch, then pour into a small saucepan.
7. Place saucepan over medium heat, and stir in the peach preserves with a little of the juice from the crock pot.
8. Constantly stirring, cook until the mixture begins to boil.
9. Continue cooking for another 2 minutes once it is boiling.
10. Pour the sauce over the chicken and yams before serving.

If peaches are plentiful where you live, you can even make this from fresh or frozen peaches. Just thaw if frozen, then mash them up with a potato masher, or even put in your food processor for a few spins. Then, add a touch of honey or sugar to bring out the sweetness to where you want it, and proceed just like you would with the preserves.
Peach sauce over chicken is an unexpected flavor which is especially nice for fancy "company's coming" dinners.
