Peanut Thai Angel Hair Pasta


* 8 oz. (uncooked)angel hair pasta
* 1/2 cup peanut butter (chunky or smooth)
* 1/4 cup soy sauce
* 2 green onions, chopped
* 1/2 cup cole slaw (use tri-color bagged mix)


1) Cook pasta according to the directions. Do not over cook.
2) While pasta cooks, put peanut butter and soy sauce in large bowl and whisk together until smooth.
3) Drain pasta and reserve 5 Tablespoons of the starchy water. Keep pasta warm.
4) Add the starchy water to the peanut butter/soy sauce mixture and whisk together.
5) Add drained pasta, onions, and cole slaw to bowl with peanut butter/soy sauce mixture and toss to mix well.
6) Serve immediately.


This is a very handy recipe to have around when you've got hungry kids in the house. Peanut butter is a good source of protein and kids tend to eat anything that has a bit of peanut butter mixed in. There are lots of vitamins in the cole slaw, too, and as long as it's covered in peanut butter, kids won't even notice they're eating a vegetable. Enjoy!
