Pecan Apricot Balls

Ingredients

*1 (8 oz.) pkg. dried apricots, chopped fine
*2 TBSP lemon juice
*2 1/2 C coconut, flaked
*1/4 C sweetened condensed milk
*2/3 C pecans, chopped fine

Directions

1. Place the dried apricots into a large mixing bow.
2. Sprinkle the lemon juice over the fruit.
3. Toss to cover the fruit well.
4. Fold in the flaked coconut.
5. Pour the condensed milk over the mixture.
6. Stir with a rubber spatula until well mixed.
7. Fold in the chopped pecans with the spatula.
8. Cover a cookie sheet completely with wax paper.
9. Form the mixture into small balls.
10. Lay the balls in a single layer on the wax paper.
11. Allow the candy to firm for at least 2 hours.

Story

If you're into really sweet treats, this is one recipe you'll want to try out on your family. Apricots and coconut make a great pair, and pecans are always a little trip to Heaven in my book! The apricots also give a beautiful color to this candy. Enjoy!
