Pecan Tilapia


* 1/2 cup finely chopped pecans
* 4 tilapia fillets
* 1 teaspoon salt
* 1/4 teaspoon black pepper
* 1/2 teaspoon garlic powder, more or less to taste
* 4 tablespoons butter (or substitute a mixture of 2 tablespoons butter and 2 tablespoons cooking oil)


1. Season fish with salt, pepper and garlic powder. Then coat with pecans.
2. Cook fish in hot butter over medium-high heat until nicely browned (about 4 minutes per side).


Tilapia is readily available in the freezer section of most every grocery store around here, and for a reasonable price. It's a very mild and flaky fish, so any flavor you add to it will enhance the finished product. Encrusting tilapia with finely chopped pecans gives this meal a decidedly fancy flare, but kids will still like it because there's not a lot of fussy ingredients. Enjoy!
