Pesto Fish |
Ingredients

* 1 lb.Frozen fish fillets (We like to use White Fish, but cod or another white fish will do.)
* 1/4 cup Mayonnaise
* 2 Tbsp Pesto
* 1 Tomatoe, chopped

Directions

1. Preheat oven to 450ºF.
2. Place fish in a roasting pan. Sprinkle each with a pinch of salt and a pinch of pepper.
3. Combine mayonnaise and pesto and spread evenly over fish.
4. Sprinkle fish with chopped tomato.
5. Cover pan and bake in preheated oven for 20 minutes or until fish flakes easily with a fork.
6. Serve with pasta or rice and your family's favourite veggie.
7. Enjoy!

Originally from North-East New Brunswick, Canada my husband and I are great lovers of seafood. However, it is hard to find good, fresh seafood in Southern Alberta where we now live and it gets a bit difficult trying to think of new ways to 'dress up' frozen fish. This recipe those fixes those frozen fish blocks up very nicely!
