Pineapple Cinnamon Apple Compote |
Ingredients

* 1 tbsp lemon juice
* 2 C of apple juice
* 2 cinnamon sticks
* 1/2 tsp. grated lemon peel
* 1/4 tsp. salt
* 2 Red Delicious apples, cored, peeled and diced
* 1 1/2 C pineapple chunks, in their own juice
* 1 orange, peeled and sectioned

Directions

1. In a large saucepan over medium high heat put the lemon juice and apple juice and bring to a rapid boil.
2. After it’s started to boil stir in the cinnamon sticks, lemon peel and salt and mix well.
3. The mixture is brought back to a rapid boil and reduce the heat to medium low.
4. Cook the mixture uncovered 10 minutes.
5. Take from heat and cool at room temperature for 15 minutes.
6. In a large mixing bowl place the apples, pineapple and orange segments.
7. Remove the cinnamon sticks from the juice mixture and discard.
8. Stir the mixture well to incorporate all the flavors.
9. Pour the juice over the fruit being sure to completely cover the fruit.
10. Cover and put in refrigerator at least 2 hours.

Compotes are a nice old fashioned way to serve fruit. This dessert is very sweet so serve it with a little real cream whipped topping to counteract the sweetness with a little coolness. It works very well.
