Pineapple Strata


* 1/2 cup butter, melted
* 1 cup sugar
* 4 eggs, beaten
* 20 oz can crushed pineapple, drained
* 6 slices of bread, cubed
* 1 teaspoon vanilla


1. Preheat oven to 350.
2. Combine butter, sugar, eggs, and pineapple. Stir to mix well.
3. Fold in bread cubes.
4. Transfer mixture to a greased baking dish.
5. Bake uncovered in preheated oven for 50 to 60 minutes or until just started to get golden brown around the edges.


Stratas are excellent ways to stretch the grocery budget. You can make really delicious ingredients, like pineapple, go a long way by just saturating bread with it! The eggs hold everything together and provide protein at the same time.

I put this in the dessert category although it does make a nice side dish with a baked ham. Either way, it's tasty and pretty inexpensive to make - and easy!
