1. Place oil in a large skillet over medium heat.
2. Add shallots.
3. Cook shallots about 45 seconds or just until they become fragrant.
4. Place plums in the skillet with the shallots.
5. Cook over medium heat until plums just start to soften about 5 minutes.
6. Sprinkle plums with sugar, allspice and ginger.
7. Place heat on low.
8. Continue cooking 8 minutes or until plums are as tender as you like.
