Popeye’s Favorite Cheesy Spinach Pie |
Ingredients

* 1 TBSP canola oil
* 1 onion, chopped fine
* 1 (10 ounce) pkg. frozen chopped spinach, thawed and drained very well
* 5 eggs, beaten
* 3 C shredded Muenster cheese (may try low-fat)
* 1/4 tsp. salt
* 1/4 tsp. pepper

Directions

1. Prepare the oven by preheating on 350 degrees.
2. Prepare a 9" pie plate by spraying with a non- stick cooking spray.
3. Pour the vegetable oil in a large skillet over medium heat and allow the oil to heat up. Add onion to the hot oil and sauté for 2 minutes or until soft and transparent.
4. Carefully stir in the drained spinach.
5. Continue cooking 5 minutes or until spinach is heated through thoroughly.
6. In a medium size mixing bowl, crack the eggs and beat slightly with a fork.
7. Add the cheese, salt and pepper to the eggs and stir the ingredients together until combined completely.
8. Add the spinach and onion mixture to the egg mixture and mix well.
9. Pour the mixture into the prepared pie plate.
10. Bake 30 - 35 minutes or until the eggs are set and the top is a nice golden brown.
11. Keep checking the dish the last 10 minutes of cooking because eggs can burn quite suddenly and if your oven has a tendency to cook hot it might bake faster than normal.

If you're on a low-glycemic diet, you may want to substitute a low-fat Muenster cheese because there is a lot of cheese in this pie! But the spinach and eggs are good and good for you. So Enjoy!
