Pork Chops and Pears in Sweet Maple Sauce

* 1 TBSP of olive oil
* 4 boneless pork chops
* 1/2 tsp salt
* 1/2 tsp pepper
* 1/4 C of butter
* 3 TBSP of maple syrup
* 3 TBSP of apricot preserves
* 1/2 tsp dried basil
* 3 pears, cored and sliced thin

1. Heat the oil in a skillet, salt and pepper the chops and place in the skillet.
2. Cook the chops, turning once, for 10 minutes, remove and keep warm.
3. Melt the butter in the skillet then stir in the syrup, preserves, and basil.
4. Add the pears, cover and cook 3 minutes or until tender.
5. Serve the sauce over the chops.

Pork chops are one meat that really cries out for a sweet flavor. No matter what it is... maple syrup, brown sugar, honey, apples, apricots, pears, peaches... pork just belongs with something sweet. You can try this same recipe with pork tenderloin, too. Make your tenderloin according to the package it came in, then just follow the rest of the directions in this recipe for the sweet topping. You'll just have to be sure to use a big enough skillet for your tenderloin to fit in so it can simmer along with the sauce.
