* 1 egg, beaten
* 1/4 cup grated Parmesan cheese
* 2 tablespoons water
* 1/2 teaspoon salt
* 2 tablespoons butter, melted
* 2 1/2 - 3 lb chicken, cut up
* 1 cup instant mashed potato flakes
Directions
1. Preheat oven to 375. Stir together egg, cheese, water and salt. Put melted butter in a baking pan.
2. Dunk chicken in egg sauce then coat with potato flakes and finally put in pan (skin side up). Bake for 1 hour.
