* 1 lb of white potatoes, diced
* 2 bunches of scallions, chopped
* 4 C water
* 3 C milk
* 2 TBSP butter
* 1 tsp. lemon juice
* Salt and pepper to taste
Directions
1. Place the water in a large saucepan over medium high heat.
2. Bring to a rapid boil.
3. Add the potatoes and scallions.
4. Continue to boil until the vegetables are fork tender.
5. Add the butter and milk to the pan.
6. Stir in the salt and pepper.
7. Return the soup to a rapid boil.
8. Add the lemon juice just before serving.
