If you thought potato pancakes were only for breakfast, you might want to give these a try. They are very hearty and quite suitable for a potato sidedish at dinnertime, or even a lunch all by themselves. The rosemary adds a whole layer of flavor and the lime juice certainly makes these potato pancakes stand out!
