Pumpkin Molasses Baked Pudding


* 4 eggs
* 2 C of pumpkin puree
* 1/2 C light molasses
* 1 C of milk
* 1 tsp cinnamon
* 1/2 tsp ginger


1. While preparing the pudding heat the oven to 350 degrees.
2. A square glass baking dish is sprayed with a non stick cooking spray.
3. In a mixing bowl break the eggs and whip with a fork until light and fluffy.
4. The pumpkin purees is stirred into the eggs and combined well.
5. The molasses and then the milk is added.
6. Stir until completely mixed together.
7. The cinnamon and ginger are sprinkled in and mixed just until combined through.
8. The pudding is poured into the prepared baking dish.
9. Bake in the 350 degree oven 55 minutes or until firm.


Pumpkin, cinnamon, ginger, and molasses are all very intense flavors that work very, very well together in this pudding. Serve with a drizzle of sweetened whipping cream poured over the top for a very special dessert during the holidays... or any occasion that needs a pretty and delicious dessert.
