Quick Ham & Navy Bean Soup |
Ingredients

* 1 tablespoon canola oil, or peanut oil
* 1 cup chopped green onions (substitute 1 small yellow onion, chopped)
* 3/4 cup cubed cooked ham (buy prepacked or buy thick slice in deli and cube it at home)
* 3 cups frozen whole corn kernels
* 1/2 teaspoon salt
* 2 (15 oz each) cans navy beans, rinsed and drained
* 2 (14 oz each) cans chicken broth
* 2 (4 1/2 oz each) cans chopped green chiles, undrained

Directions

1. Saute onions and ham in large soup pot over medium heat in hot oil. Cook about 5 minutes, stirring often.
2. Add all ingredients to soup pot and mix well. 3. Bring to a boil then turn heat down to low and simmer slowly for 10 - 15 minutes, stirring several times to cook through.

I remember my Gramma's Navy Bean soup. It took all day to make! You know, boil the ham bone, cook the dry beans, etc. etc. I loved her soup, but I just don't think I have the time to make it the way she did. This one is full of flavor and it's quick. Watch that you don't simmer it too hard. Beans are delicate and will tend to foam up if you boil them. Don't forget the crusty bread to go with this!
