Quick Homemade Beef & Noodle Soup |
Ingredients

* 1 Tbsp. canola or olive oil
* 1 medium onion
* 1 stalk celery sliced
* 1 lb. chopped beef steak
* 1/4 tsp. garlic powder
* 10 cups Water
* 8 - 10 beef bullion Cubes
* 2 Tbsp. mushroom flakes (King Bolete)
* 1 tsp. crushed sage
* 2-3 c. egg noodles (or fancy noodles)
* 2 c. sliced green beans (fresh, frozen or canned)

Directions

1. Saute onion and celery over medium heat for about 3 minutes. Add chopped beef steak and gently cook until browned. Dust with garlic powder.
2. Slowly add water and bullion cubes. Add mushroom flakes and crushed sage. Heat over medium-high heat to boiling. Add egg noodles.
3. Lower heat to medium, allow to gently boil the noodles until cooked, about 7 minutes. Add sliced green beans, and simmer for 1/2 hour.
4. Serve with toasted bread and melted cheese!

Oh, I am a soup person ... and, usually my creations are more complicated than this. I created this recipe out of the necessity of needing something
to feed my hardworking husband in a flash. I make a lot soup from scratch and every time it is different - probably the nature of soups in general. Anyway, I was surprised that such a simple soup as this could have so much body and flavor.
