1. Put large heavy skillet on medium-high heat, add the pine nuts and toss until just starting to toast, then dump out and set aside.
2. Add oil to pan over heat and immediately add spinach, cooking, tossing with tongs, until it just starts to wilt.
3. Add the toasted pine nuts back to the skillet, and garlic and toss with the spinach; continue cooking cooking for about 2 minutes or until garlic gets fragrant.
4. Serve while hot.

I call this "Quick" for a reason. You're going to make this quickly, so be ready. You don't want the spinach to cook so much that it loses all its form - just until it wilts. So, the dish goes fast. I actually make this after the main dish is ready to serve so I can dish it up immediately from skillet to plate.
