Quick Time Canadian Bacon Egg Sandwich |
Ingredients

* 2 eggs
* 1 tsp skim milk
* 1/4 tsp salt
* 1/8 tsp pepper
* 2 slices of Canadian bacon
* 1 English muffin, split and toasted
* 2 tbsp low fat cheddar cheese, shredded

Directions

1. In a bowl, whisk the eggs, milk, salt and pepper together well.
2. Spray 2 microwave safe small cups with non stick cooking spray.
3. Pour the egg mixture into the 2 prepared cups.
4. Microwave the eggs on high for 20 seconds.
5. Stir and continue microwaving on high for 20 seconds or until the egg mixture in both cups is almost set.
6. Put English muffin slices on two separate microwave safe plates and place 1 slice of the bacon on each of the English muffin pieces.
7. Top the bacon with the microwaved egg mixture.
8. Sprinkle the cheese evenly over the egg mixture.
9. Microwave both plates for 10 seconds or until the cheese has melted.
10. Let stand 1 minute before serving.
Makes 2 servings

Using the microwave to do most of the cooking shortens the time so your sandwich is ready to eat when you are. This will serve two people, but one really hungry person could also eat this.
English muffins are low in fat and sugars, so they make an excellent choice for breakfast sandwiches like this. You can tweak the recipe even more by using egg whites only, turkey sausage or bacon, and other low fat cheeses, like mozzarella, for instance.
