Quinoa Peanut Butter Drop Cookies

Ingredients

* 1/3 cup brown sugar, packed tight for measure
* 1/2 cup butter
* 1/2 cup peanut butter
* 1/2 cup honey
* 1 cup rice flour
* 3/4 cup cooked quinoa
* 1/4 tsp salt
* 1 tsp baking soda

Directions

1. Preheat oven to 350 degrees.
2. Combine first four ingredients in a bowl and mix with beater until creamy.
3. Add remaining ingredients and mix until combined.
4. Spoon rounded teaspoonfuls of batter onto cookie sheets and bake for 10 to 14 minutes. Yields up to three dozen cookies.

Story

Believe or not, these cookies are actually healthy for you! Between the quinoa and peanut butter, these cookies could be considered a main dish - well almost - since the protein level is way up there.

I normally have almond flour in the house so I substituted it for the rice flour. I think it turned out great! And, even more protein and nutrients. Enjoy!
