Raisin Oat Pan Cookies |
Ingredients

* 3/4 cup unsalted butter
* 1/4 cup super fine (castor) sugar
* 1/3 cup light corn syrup
* 2 3/4 cups Old Fashioned Quaker Oats
* 1 cup golden raisins (more or less to your taste)

Directions

1. Preheat oven to 350 degrees and line an 8 inch square baking pan with parchment paper.
2. In a large saucepan over low heat, stir together the butter, sugar, and syrup, just until the butter melts.
3. Add the oatmeal and raisins and mix together gently until all combined.
4. Scoop the mixture into the prepared baking pan and smooth down.
5. Bake in preheated oven for 15 to 20 minutes or until light golden brown.
6. Remove from oven. Allow to cool a bit in the pan before lifting out by the parchment paper edges to a cutting board.
7. Cut into little rectangles or squares with a sharp knife. Let pieces cool completely then store in airtight container.

These are nice and chewy and delicious just as they are, but you can actually change the recipe quite a bit. Add nuts if you like or use other types of dried fruit instead of, or along with, the raisins.
This is the perfect recipe to make when you're surprised by a request for treats to bring to school. They go together so fast, you can easily make two pans and get two dozen treats.
