By increasing the egg whites instead of using all whole eggs, the cholesterol in this dish is reduced. You still get all the great flavor without adding all the egg yolks.
You can use a fat-free Ranch dressing to cut the fat even more. But, watch out for the sugar. Often, when dressings are reduced fat or fat free, the sugar is bumped up for more flavor. If you choose, you may substitute Greek yogurt and a teaspoon or so of mixed seasoning you like.
