Raspberry Buns

Ingredients

* 8oz self-raising flour
* 4oz margarine
* 3oz caster sugar
* 1 egg beaten
* milk
* raspberry jam (could be any jam really)
* caster sugar (for dusting)

Directions

Set oven to 425°F or Mark 7.

Grease and flour baking sheets.

Sift the flour into a bowl and rub in the margarine.

Add the sugar and beaten egg. Use enough milk to make a fairly stiff consistency.

Divide the mixture into about walnut-size balls and place on baking sheet, allowing space for them to spread slightly during cooking.

Make a small hole in the centre of each bal1 and spoon in a little raspberry jam.


Dust lightly with caster sugar.

Bake for 10 minutes then reduce heat to 350°F or Mark 4 and bake for a further 5 minutes.

The buns should be light golden in colour.
Cool on a wire rack.

Store in an airtight container at room temperature

Story

I use to make these for my mum and she loved them. I was dreaming the other day and thought wow I think I will make some Raspberry Buns and I decided to share them with you all here.

I am sure you will enjoy them. If you prefer a different jam go ahead and create your own peach, blackberry or plum buns!!

My daughter is visiting soon and asked me to make the raspberry buns I used to make when she was small. Eek she is now 40 and I forgot the recipe. Thanks for helping me to win 'mum of the year' for producing such wonderful childhood memories.
