Red Pepper Egg Salad |

Ingredients
|
* 4 hard cooked eggs, chopped fine
* 2 TBSP mayonnaise
* 1 1/2 tsp of mustard
* 1/2 tsp garlic powder
* 1/4 tsp salt
* 1/4 tsp pepper
* 1/4 tsp paprika
* 1 red bell pepper, cut into 8 rings
* 1 cucumber, sliced

Directions
|
1. Place the eggs in a large mixing bowl.
2. Whisk the mayonnaise, mustard, garlic, salt and pepper together in a smaller bowl.
3. Add the mayonnaise mixture to the eggs and blend together well.
4. Place the bell pepper rings onto a serving platter.
5. Fill each ring with the egg mixture and top with a slice or two of cucumber.

This is a very nice alternative to your typical Deviled Eggs recipe. It's pretty and tasty, with the nice crunchy sweetness of the red bell pepper. Also, you can't go wrong with the fresh flavor of cucumbers with your egg salad! Delicious! This is very kid-friendly, too, since it doesn't call for onion and is so nice and colorful. Or perhaps, if you're having a little luncheon or book club meeting for the ladies, this is a very nice presentation.
