Reggae Shrimp

Ingredients

* 1 T. Olive or Coconut Oil
* 1/2 c. chopped onions
* 1 T. diced garlic
* 1 t. cumin
* 1 t. paprika
* 1 can coconut milk
* 1 can diced tomatoes
* Salt and pepper
* 1 pound raw shrimp

Directions

1. In a large skillet over medium heat, cook olive oil and onions until soft. Then add garlic.
2. Add cumin, paprika, coconut milk and tomatoes. Add salt and pepper to taste. Cook until thickened slightly.
3. Add shrimp and cook for another couple of minutes or until shrimp is pink (don't overcook!). Serve with lots of rice to soak up sauce.

This is an easy, delicious and very quick recipe. Even the kids love it!
