Reuben Baked Potatoes |
Ingredients

* 4 baking potatoes, baked, cut split lengthwise and pulp loosened with a fork
* 2 cups sauerkraut, drained
* 2 cups cooked corned beef, chopped
* 1/2 cup 1000 Island salad dressing
* 8 slices Swiss cheese

Directions

1. Preheat oven to 400.
2. Set baked potatoes, cut side up, in large shallow baking pan.
3. Divide ingredients equally between 8 baked potato halves in this order: sauerkraut, corned beef, dressing, cheese.
4. Bake, uncovered, in preheated oven for 10 to 15 minutes, or until hot and bubbly and cheese is melted.

These potatoes are a full-meal deal. I use very good tender sauerkraut, good mealy bakers, lean corned beef, and good Swiss cheese. Don't skimp on quality ingredients. This is such an inexpensive dish, skimping doesn't add up to much money and the quality really stands out when you're making a dish with few ingredients and such intense flavors.
This is a great dish to make for St. Patrick's day celebrations. It's filling and different enough to impress.
One thing you might want to change is to put the 1000 Island dressing on after the completed potatoes come out of the oven. Just spread it over the melted cheese. The cold dressing is a nice change.
