Rhubarb Pie Casserole


* 3 C rhubarb, sliced
* 1 tbsp lemon juice
* 3 tbsp sugar, divided
* 2 tsp butter, cut into little pieces
* 2 C of baking mix
* 2 C of whipping cream


1. Set the oven on 350 degrees and spray a baking dish well with cooking spray.
2. In a large mixing bowl stir together the rhubarb, lemon juice, and sugar, being sure to cover the fruit well.
3. Spread the fruit into the prepared baking dish and arrange the butter pieces evenly over the top of the fruit.
4. Prepare the baking mix according to the package directions.
5. Pour the prepared baking mix over the fruit making sure the mix completely covers the fruit.
6. Poke holes in the middle of the baking mix batter with a fork.
7. Bake 35 to 40 minutes or until a golden brown.
8. Remove from oven and allow to cool slightly before cutting into servings.
9. Add a dollop of whipped cream on top of each serving.


Why fuss with a pie crust? This is a nice family style rhubarb pie-like casserole that serves a lot of people and is very easy to make.

Serve it just a little warm with super cold whipped topping for a wonderful dessert.
