Rice and Tomato Soup

Ingredients

* 1/2 C white rice
* 1/2 C shredded cheddar cheese
* 1 C tomato juice
* 1 TBSP butter
* 5 C water
* Salt and pepper to taste


Directions

1. Place the water in a large soup pot over medium heat.
2. Bring to a rapid boil.
3. Add the rice.
4. Stir in the butter, salt and pepper.
5. Continue to boil until the rice is as soft as you prefer.
6. Add the tomato juice and cheese.
7. Return to a rapid boil.
8. Continue cooking until the cheese has completely melted.
